Where can I find authentic Indian recipies for chicken curry. I had some while I was living in England and it was the best…any suggestions? ALso are there different types of spicy curry? Please explain…


You will find lots of recipes on the internet and in cook books. But that isn’t the main problem with creating authentic indian dishes.
The key is the cooking of indian foods is based around the instruments that you use, which unless you have a big budget, it may be out of reach. The curries and the breads are cooked very quickly on very high heats. Much higher than traditional western cookers. If you use western cookers, you will create some nice tastes, resembling what you experienced in England (perhaps in Birmingham’s ‘Balti’ district – the best you will find in England.. some say the world!!), but they will not have the same texture as in the restaurants.
Experiment with the recipes you get given here and others you find, but you will perhaps need to accept that the best curries and baltis are cooked not just with a certain set of ingredients, but with a different set of tools.
